Hot collagen matcha latte: the recipe and 3 winter variations
Oct 11, 2026
Reading time: 5 minutes
This summer, we suggested iced matcha. When the mornings turn chilly, the same tub can be made into a hot version too. Here's the basic recipe step by step, the right water temperature, and three winter variations, all tested at home.
In short
- One serving of Collagen Matcha Latte in a splash of hot, but not boiling, water, then hot milk.
- Mix the powder into the water first: that's the secret to a lump-free drink.
- Matcha contains caffeine: enjoy it at breakfast or during the day, not in the evening.
The basic recipe: hot matcha latte
Ingredients (1 mug)
- 1 serving of Collagen Matcha Latte (the scoop provided)
- 50 ml of hot, but not boiling, water
- 200 ml of hot milk, dairy or plant-based (oat, almond, coconut)
- Optional: 1 teaspoon of honey or maple syrup
Method
- Put the serving in a mug, add 50 ml of hot (not boiling) water and stir for 5 to 10 seconds until the powder has dissolved.
- Heat the milk without boiling it, and froth it if you like.
- Pour the milk over the matcha, sweeten if you like, and enjoy.
Why not boiling water? Matcha is a green tea. In water that's too hot, it becomes more bitter. Water between 70 and 80 °C keeps a softer taste.
Three winter variations
1. Vanilla-cinnamon matcha latte
The basic recipe, with a few drops of vanilla extract and a pinch of cinnamon in the hot milk. Sprinkle a little cinnamon on the foam.
2. Matcha chai
While the milk heats, infuse a slice of fresh ginger, a crushed cardamom pod and a small cinnamon stick in it. Strain, then pour over the matcha.
3. Coconut matcha latte
Replace the milk with a coconut drink, or half coconut milk and half water. The texture is rounder, and the coconut flavour softens the matcha.

Which milk should you choose?
| Milk | What it brings |
|---|---|
| Oat | Mild and slightly sweet, it froths well |
| Almond | Lighter, with a hint of almond |
| Coconut | Rounder and more indulgent |
| Cow's milk | Classic, it froths easily |
A tip from our customers: make it with milk. With water alone, the matcha taste is much stronger.
Our tips
- No lumps: the powder first in a splash of hot water, then the milk. Never the other way round.
- No microwave once it's ready: heat the milk first, then add it to the matcha. Avoid reheating the drink.
- The right time: one mug a day, during or after a meal, for example at breakfast. Never on an empty stomach, and not in the evening, because of the caffeine.
- Caffeine: one serving provides 31.5 mg of caffeine. For comparison, an espresso provides about 80 mg (EFSA, 2015). Our article Matcha latte or coffee compares the two drinks.
- Heat and collagen: the heat of a latte doesn't damage collagen peptides, which are already made using heat (León-López et al., 2019).

Frequently asked questions
Can you make the matcha latte with boiling water?
Water between 70 and 80 °C is better: matcha becomes more bitter in boiling water.
Do you need a bamboo whisk?
No. A spoon, a small whisk or a milk frother is enough, as long as the powder is fully dissolved in the splash of hot water.
Can you sweeten it?
Yes, if you like. Collagen Matcha Latte is sugar-free: a spoonful of honey or maple syrup softens the taste of matcha.
Can you drink it in the evening?
Best avoided: one serving contains 31.5 mg of caffeine. Have it at breakfast or during the day instead.
Can you take it on an empty stomach?
No. Take it during or after a meal.
And in summer?
